Chocolate Raspberry Pavlova

As it has become our summer hobby, my friend and I dove back into the kitchen recently for another day of baking. We decided to make a Chocolate Raspberry Pavlova and tested out the recipe from Pavlova is a meringue-based dessert and is very popular in Australia and in New Zealand! It is also very simple to make – all we needed to do was make meringue and add cocoa powder, a bit of balsamic vinegar and some dark chocolate shavings. That was it! After folding the ingredients until well incorporated, we placed it on a baking sheet and popped it in the oven.

After it had cooled down, we decorated our lovely pavlova with whipped cream, raspberries, and sifted cocoa powder. As you can see, we only did half because we wanted to save the other half for the next day and didn’t want the meringue to become soggy with cream. It was delicious. The outside was crunchy and inside it had a marshmallowy texture. I really can’t think of a better combination than dark chocolate, cream, and raspberries!

Overall, it was a success! But I think my friend and I agree that next time we will cut back on the sugar. It was very close to being overbearingly sweet. With less sugar, I think this recipe is a keeper. It is definitely a “go-to” for any hot summer day!
